I was tested yesterday at work and passed. I had cut NY strips and fillet Mignon the other day. There was some odd pieces left over that couldn't be portioned correctly. So yesterday Tony, the owner, wanted me to make something out of the scraps for him and Mark, the GM. I'm not good yet at making something off the fly. Haven't been a chef long enough. I'm still learning stuff all the time. So I did something that was quick and easy. I took the pieces and coated them with house-made Cajun spices and flour and pan seared them. Then I deglazed the pan with white wine and put it in the oven to finish off. I also got some mashed potatoes cooking to go along with it. While I was in the midst of making that an order came in. So I was rushing around for a bit. It was all good though. I got the order out in good time. My off-the-cuff Cajun NY Strip pieces with white wine pan drippings and mashed potatoes turned out quite well. Tony told me today that he really liked it and we need to sit down sometime and I tell him how I made it. Who knows...it might go on the soon-to-be new and improved menu. Tony was wanting me to create something for the menu. I was thinking about making a potted beer and cheddar cheese dip for happy hour, but maybe my spur of the moment dish will make it on.
I hardly ever go outside barefooted. I did this evening and stepped on a bee. Grr! This is not good because I am very allergic. My foot is already quite swollen up and will be worse in the morning. I am scheduled to work tomorrow. We have a party scheduled for lunch. D'oh! I can see me hobbling around tomorrow. Good thing I won't be alone in the kitchen or else it would be worse than it already will be.
